Here are recipes on other people’s sites that I’ve made successfully and enjoyed.
Baked Goods:
Whoopie pies–I hadn’t every had these before, but they turned out very well. I will definitely make these again.
Double Chocolate Chip Cookies–Very chocolatey. I used dark chocolate chips instead of chunks and they were great. Beware: it makes a lot of cookies.
Supernatural Brownies–I split this recipe in half because it makes a 13 x 9 pan. They’re very rich brownies, so I was fine with fewer.
Black Bottom Cupcakes–I made these for a birthday party, and they were a big hit. Slightly more sophisticated than chocolate cupcakes with cream cheese frosting.
Sweet Potato Cheesecake–We usually have a large selection of pies at Thanksgiving in my house, but this year I made this cheesecake instead. It was great. I used Neufchatel instead of full fat cream cheese, and it worked wonderfully.
Main Courses:
Elise’s Mom’s Summer Squash–tasty and quick to prepare. Easy to modify with whatever farmer’s market items you have on hand.
Penna with Ricotta and Asparagus–I halved the recipe, and I left some of the bits of garlic in the bowl because I like a stronger garlic flavor. Very tasty. Penne is key to the recipe, as opposed to another kind of pasta, because it takes a long time to cook.
